This project was designed in collaboration with Elise Teiller for our master degree at the École Camondo.
We worked on a prospective new restaurant for chief Alain Passard, who puts vegetables at the hight points of his culinary creations. He grows them in his gardens close from Paris.

ut of this new restaurant, The Clearing, we wanted to invite his gardens in the heart of the restaurant.
We made it a passage from the street, across a subdued and intimate bar, to an open dining room on the garden. Exterior and interior are blending. A glass roof, as a winter garden, extends the room while the windows disappear. Customers can thus enjoy a full gastronomic experience in this vegetal clearing, in any season.

If chief Passard offer an almost vegetarian menu, it is also
really fine dining. The component of the restaurant are bonding to this standing, and create a prestigious mineral and vegetal environment.

Finally the restaurant is located in XIXth century private mansion in the Monceau plain. Codes and aesthetics from this era are distilled in the rooms. The restaurant offers a path across salons, from an indoor smokehouse to a visually open winter garden.
